What is Ham? How Long Does it Last?

Ham is pork from a leg cut that has been preserved by wet or dry curing, with or without smoking. Ham is not rich only in fats and proteins it is rich in sodium too. One serving of ham of only 28 grams contains about 365 milligrams of sodium. As a processed meat, the term ham includes both whole cuts of meat and ones that have been mechanically carved. Depends on whether it's cooked or uncooked and how ham is stored. Uncooked hams can be refrigerated for 1-2 weeks or frozen for up to 6 months. Fresh ham should smell fresh and have a sweet aroma – not overly ‘meaty’.Cooked ham can be stored in the fridge for about two weeks or the freezer for 1-2 months. Store ham in the coolest part of the fridge. Also, ham will keep longer on the bone, so only slice what you need.

Why Store Ham in a Bag?

A ham bag is a breathable sack made from natural cotton fibers, designed to cradle your ham in an environment that strikes the perfect balance between protection and aeration. The primary goal is to keep your ham safe from external elements while allowing it to breathe, resulting the ham to age gracefully and becomes a culinary gourmet meal. 

Start by giving your ham a thorough clean and pat dry with a paper towel. Ensure that the ham bag is clean and free from any dust. Gently place your ham into the bag, making sure it fits comfortably without being cramped. Pull the bag up over the ham, covering it entirely for optimal protection. Close the ham bag securely by pulling the drawstring. 

Instructions for Drawstring Cotton Bag

  1. Make a solution with water (4 cups) and white vinegar (2 table spoons)
  2. Soak the Ham Bag in the vinegar solution, wringing out excess water
  3. Place the ham in the Ham Bag and rest on a plate before storing in the coolest part of your fridge
  4. Repeat every few days or when the Ham Bag dries out. 

How to Glaze Ham

  • Cut the fat crossways or lengthways using a small, sharp knife at 1 cm intervals. To form a honeycomb pattern, cut the fat crossways and lengthways
  • Place a large foil roasting pan onto a large baking tray. Wrap the hock end in a folded sheet of foil to prevent it from burning
  • Prepare your glaze. Brush the glaze over the ham fat to coat it evenly. Then, cook on the lowest shelf in a preheated oven at 180°C/160°C fan-forced, brushing every 20 minutes with remaining glaze for about 1 hour or until golden and caramelised
  • Remove from the oven. Tuck in a few sprigs of fresh herbs, such as bay leaves or rosemary for garnish.
